Food – Local specialities:
The cuisine of Provence relies heavily upon fresh fish, vegetables and fruit- tomatoes, peppers, melons, peaches- as well as garlic, olives and olive oil. Local dishes include ratatouille (a vegetable stew), brandade de morue (a thick cream with cod, olive oil, garlic) and daube provencal (a stew with braised beef). A local wine is made using Servan grapes, a variety which is said to keep until Easter.
